Avocado & Roasted Red Pepper Salsa
A zingy salsa made with lime, garlic and fresh herbs.

Ingredients
- 250 g tomato
- 150 g roasted red pepper
- 1 Avocado
- 1/2 red onion
- 1 tbsp organic chilli flakes
- Large handful of parsley
- Large handful of coriander
Dressing
- 1 clove garlic
- 1/2 tsp organic unrefined cane sugar
- 2 tsp organic apple cider vinegar
- 2 tbsp organic lime juice
- 1 tbsp organic extra virgin olive oil
- fine sea salt
- organic cracked black pepper
Instructions
- To make the dressing, finely chop the garlic and place in a bowl. Add the brown sugar, vinegar, lime juice, salt and pepper then whisk until the sugar has dissolved.
- Whilst still whisking, drizzle in the olive oil.
- Finely chop the red onion and add to a large bowl along with the chilli flakes.
- Finely chop the tomato, red pepper and avocado (or leave larger if you prefer a chunkier salsa) and add to the bowl.
- Roughly chop the coriander and parsley and add to the bowl.
- Finally spoon over the dressing and mix well.
