Vitamin A is a powerful antioxidant which comes it two forms, one of which is preformed (retinol) is only found in animal products.Ā The other type is formed from carotenoids which are yellow organic plant pigments – these can be converted to Vitamin A.Ā Vitamin A is destroyed at high temperatures so foods which are cooked for over an hour will have lost their Vitamin A.
