Black Bean Chilli Recipe

This is a wonderful spicy warming dish to enjoy in any season. Nothing hits the spot like a warming chilli, Try it served with nachos and guacamole or simply gobbled on its own like a hearty stew.

  • Fry the onion, celery and carrots in the olive oil with salt and pepper for 20 minutes on a medium to low heat.
  • Add the chilli flakes, thyme and garlic and cook for 2 minutes.
  • Add the cayenne pepper and the tomato paste and cook for a further 2 minutes.
  • Add the vinegar and reduce for 2 minutes.
  • Add the tinned tomatoes and vegetable stock, bring to the boil then reduce and simmer and cook for 30 minutes.
  • Add the black beans and cook for 5 minutes.
  • Serve with yoghurt, sliced red chillis and coriander.
