Black Bean Chilli Recipe
This is a wonderful spicy warming dish to enjoy in any season. Nothing hits the spot like a warming chilli, Try it served with nachos and guacamole or simply gobbled on its own like a hearty stew.

Ingredients
- 1 tbsp organic extra virgin olive oil
- 1 medium onion finely chopped
- 2 stalks of celery finely chopped
- 2 carrots finely chopped
- 2 garlic cloves
- 1 tbsp organic chilli flakes
- 2 tsp organic dried thyme
- 2 tsp organic cayenne pepper
- 1 tbsp tomato paste
- 1 tbsp organic apple cider vinegar
- 400 g organic chopped tomatoes
- 500 ml organic vegetable bouillon
- 250 g organic black turtle beans (cooked)
- fine sea salt
- organic cracked black pepper
Instructions
- Fry the onion, celery and carrots in the olive oil with salt and pepper for 20 minutes on a medium to low heat.
- Add the chilli flakes, thyme and garlic and cook for 2 minutes.
- Add the cayenne pepper and the tomato paste and cook for a further 2 minutes.
- Add the vinegar and reduce for 2 minutes.
- Add the tinned tomatoes and vegetable stock, bring to the boil then reduce and simmer and cook for 30 minutes.
- Add the black beans and cook for 5 minutes.
- Serve with yoghurt, sliced red chillis and coriander.
