Nectarine and Quinoa Salad Recipe
This nectarine and quinoa salad is a tasty, naturally sweet dish. If you love a range of textures and flavours, this is the salad for you. This healthy salad of grains and nuts with a minty yoghurt dressing is a great summery lunch. If you are vegan simply swap the yoghurt for a dairy free alternative. You can also substitute the nectarine for any seasonal fruit, let us know what you try!

Ingredients
- 250 g organic quinoa
- 2 tbsp organic extra virgin olive oil
- half a lemon juiced
- natural sea salt crystals
- organic cracked black pepper
- 1 cucumber finely diced
- 3 spring onions finely diced
- 1 little gem or cos lettuce roughly chopped
- 2 nectarines finely diced
- 100 g walnuts roughly chopped
- 1 dsp organic maple syrup
- for the dressing -
- 3 tbsp yoghurt
- 1 tsp chopped mint
- half a lemon juiced
- 1 tbsp organic extra virgin olive oil
- natural sea salt crystals
- organic cracked black pepper
Instructions
- For the dressing, stir the lemon juice, mint and salt and pepper into the yoghurt, then drizzle in the olive oil whilst still stirring.
- Next, gently fry the nectarine and walnuts in olive oil for 2 minutes.
- Add the maple syrup and fry for a further 2 minutes then put aside.
- Place the cooked whole grains in a large bowl, add the olive oil, lemon juice, cucumber, spring onion and lettuce then mix throughly.
- To serve, divide the grains into 4 portions, place the nectarine and walnuts on top and drizzle with the dressing.
