Kombucha is a fermented tea drink that is produced by adding a symbiotic culture of bacteria and yeast (the ‘scoby’) to tea and sugar. The ‘scoby’ converts sugar into alcohol, which is then converted into acetic acid which creates a fizzy, carbonated drink with a slightly vinegary taste.
