Our gluten free organic brown rice flour is both light and nutritious, meaning that it is a great substitute in many baking and cooking recipes for gluten-containing flours. Be aware however that baked goods such as cookies and cakes will bake faster when using brown rice flour. Alternatively, this flour can be used in combination with other flours, such as all purpose varieties, or used to thicken sauces in both sweet and savoury recipes. This brown rice flour contains all the goodness of the whole grain, with only the outer, inedible husk removed before the rice is then milled. The resulting flavour is mildly nutty and earthy, meaning that it does not overpower the dishes that it is then used within.

Originating from the Oryza sativa plant, native to Asia, brown rice flour has become a staple in many countries such as China and Indonesia, as well as other parts of the world including South America and Africa. Because of its gluten-free properties, brown rice flour is often used in bread making, resulting in ‘wheaty’ tasting loaves, though many people choose to also make biscuits and puddings with it.

Brown rice flour is a great source of fibre and vitamins B1 and B6 and in addition to this, just one serving of brown rice flour contains 130% of the recommended daily allowance (RDA) of manganese, a powerful antioxidant.

Brown Rice Bread Recipe:

Ingredients:

  • 2 cups organic brown rice flour
  • 1 & 3/4 cups warm water
  • 1/4 cup sunflower oil
  • 1/4 cup psyllium husk powder (you can make this by grinding our organic psyllium husks into a fine powder with a pestle and mortar)
  • 1 tbsp instant yeast
  • 2 tbsp sugar
  • 3/4 tsp xanthan gum
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 teaspoon salt

Method:

  1. Grease an 8×4 metal loaf tin.
  2. Whisk together the dry ingredients (brown rice flour, psyllium husk powder, yeast, sugar, baking powder, xanthan gum & salt).
  3. Add the liquid ingredients (water, sunflower oil & eggs) and mix well. You will end up with a ‘shaggy’ dough – i.e. it is well mixed but looks lumpy. It will form a cohesive ball, but will not be smooth.
  4. Transfer the dough to the loaf pan and smooth the top with a spatula.
  5. Allow the dough to rise by covering the tin and dough with a kitchen towel. Give it between 30 – 40 minutes in a warm area until the dough has doubled in size. We recommend putting your dough into a microwave with the power off, as this creates the perfect environment.
  6. With 10 minutes left to allow the dough to rise, preheat your oven to 180°C/160°C fan and position a rack to the middle of the oven.
  7. Put the dough into the oven for 40 to 50 minutes, or until the bread has turned dark brown on the top and the loaf sounds hollow when it is tapped.
  8. Allow the loaf to cool for 10 minutes in its pan before removing and allowing to cool completely on a wire rack.
