Polenta is a great alternative to pasta, rice or potatoes and is a great accompaniment to meat or fishes dishes.

Our organic cornmeal is produced by coarsely grinding corn kernels from the sunny Mediterranean. Our cornmeal is GMO free, organic and delicious.

Cornmeal is often known as polenta, however technically it is not polenta until the cornmeal has been cooked. It originated in Northern Italy where it was an essential low cost food source.

Polenta is a creamy, hearty, sweet dish which is a great alternative to pasta, rice or potatoes and is a great accompaniment to meat or fishes dishes.

Cornmeal can also be used instead of breadcrumbs to make a lovely golden, crunchy textured coating.

Cooking Instructions

Ingredients

950ml water
3/4 tsp sea salt
160g organic cornmeal (polenta)
2-3 tbsp vegan butter

Method

  1. Bring water to a boil.
  2. Add salt and turn down to medium heat
  3. Pour in polenta and continuously stir.
  4. Keep stirring until it starts to thicken which should take about 2 minutes.
  5. Turn down the heat to low, cover and simmer for 30 minutes.
  6. Stir every 5 minutes to prevent it from sticking.
  7. Turn off the heat and stir in the butter.
  8. Enjoy

Storage

For optimum freshness keep in a cool place away from moisture and direct sunlight.  Store in a tightly sealed bag or container.

  1. We like to use cornmeal as a breadcrumb to coat fish and vegetables. Once baked or fried you get an amazing crunchy, golden dish.
  2. We like use cornmeal to bake cakes as it can give a lovely golden colour and crumbly consistency.
