Organic Cacao Butter (chocolate in the making)

Cacao used to be reserved for people of importance or those with spiritual duties, hence its alias food of the gods.  Cacao butter is loved for its rich texture and nutritional power.  The beauty of this organic cacao butter is its ability to produce rich and creamy chocolate which will make you re-think chocolate all together.

Organic Cacao Butter is the fat extracted from the cacao bean, unlike cacao nibs and powder, the butter is mild tasting but has a rich chocolatey aroma.  If you want to try making your own chocolate then cacao butter is your starting point to the best texture and flavour.

Most regular chocolate choices have milk, sugar and other additives thrown in to preserve it, so if you like the idea of making your own natural versions then cacao butter and cacao powder are your building blocks.  Cacao powder is ground down from the bean and is a source of selenium which contributes to normal function of the thyroid and immune system.  They are high in a number of important nutrients including magnesium which is necessary for the reduction of tiredness and fatigue – a great reason to make chocolate!

Cacao butter has a melting point of around 36 °C so it is solid at room temperature but melts in the mouth – this makes chocolate made with cacao butter superior to those recipes made with coconut oil.

Simple plant based chocolate:

Ingredients:

  1. 250g Forest Whole Foods Cacao Butter
  2. 50g Forest Whole Foods Natural Cacao Powder
  3. 100g Forest Whole Foods Coconut Sugar
  4. Optional: vanilla essence, organic cinnamon powder, organic lucuma powder, organic goji berries.

 

Method:

  1. Blend the dry ingredients to combine and smooth them, then add them to a glass bowl.
  2. Melt the cacao butter in a bain marie style no higher than 40°C (use a thermometer for best results)
  3. Pour the melted butter into the bowl of dry ingredients and stir them for 10 minutes or so until the chocolate cools to about 25°C
  4. Put this back on the bain marie until has warmed to 30°C and then transfer it to your molds to cool for a few hours.
  5. Cool it in the fridge and plan your next chocolate recipe!

Storage

For optimum freshness keep in a cool place away from moisture and direct sunlight.  Store in a tightly sealed bag or container in the refrigerator.

  1. We love making dairy free chocolate treats – making raw chocolate can be as easy or complicated as you like – if you dont want to focus too much on a perfect firm texture at first, you can forget tempering and simply combine the ingredients and experiment.
  2. If you love technical preparations then you can go wild with chocolate and temper away with your thermometer at hand.
