Black Bean Chilli Recipe
This is a wonderful spicy warming dish to enjoy in any season. Nothing hits the spot like a warming chilli, Try it served with nachos and guacamole or simply gobbled on its own like a hearty stew.

Ingredients

organic extra virgin olive oil

medium onion finely chopped

stalks of celery finely chopped
2
carrots finely chopped
2
garlic cloves

organic chilli flakes

tsp
organic dried thyme

tsp
organic cayenne pepper

tomato paste
1
tbsp
organic apple cider vinegar
400
g
organic chopped tomatoes
500
ml
organic vegetable bouillon
250
g
organic black turtle beans (cooked)
fine sea salt
organic cracked black pepper
Instructions
Fry the onion, celery and carrots in the olive oil with salt and pepper for 20 minutes on a medium to low heat.
Add the chilli flakes, thyme and garlic and cook for 2 minutes.
Add the cayenne pepper and the tomato paste and cook for a further 2 minutes.
Add the vinegar and reduce for 2 minutes.
Add the tinned tomatoes and vegetable stock, bring to the boil then reduce and simmer and cook for 30 minutes.
Add the black beans and cook for 5 minutes.
Serve with yoghurt, sliced red chillis and coriander.
